Processing of Sole Fish into fresh and frozen products
In the advanced production facility in Urk, sole is carefully processed into filleted sole, skinned sole and frozen sole, tailored to the wishes of the buyers. Its delicate structure and rich taste make sole a luxury product in both the catering and retail sectors. Neerlandia works according to strict quality standards (IFS, BRC) and offers customization in packaging, portion size and product presentation, including private label. Both frozen and fresh sole is available, with the possibility of MSC certified catch.
Import of Fresh Sole Fish to the Netherlands
Neerlandia sources sole mainly from Dutch, Belgian and French fish auctions, including Urk, Stellendam, Vlissingen and Zeebrugge. A smaller proportion of the supply comes from British waters, where sole is caught sustainably. The fish is almost always supplied as day-fresh whole sole, directly from the cutters. Thanks to close cooperation with fishermen and auctions, Neerlandia can count on a continuous flow of high-quality sole in various grades, with attention to season, catching method and freshness.

Sole is often fried in butter (classic à la meunière), but you can also steam, grill or cook it in the oven. Thanks to its firm, fine fish flesh, it stays nicely whole during frying. Serve sole with lemon, parsley and light sauces such as butter sauce or white wine sauce.
Fresh sole is available at fish stores, markets and specialized fish stalls. Online fish stores also offer sole. Supermarkets sometimes sell sole fillets or frozen varieties. When purchasing, look for a fresh smell, clear eyes, and shiny skin.
Sole (Dover sole) is finer tasting, firmer and pricier.
Lemon sole is somewhat softer, cheaper and wider in shape.
Sole is more culinary appreciated for its delicate texture and flavor, while lemon sole is considered an affordable alternative.
The sustainability of sole depends on the fishing method and capture location. North Sea sole is partly caught sustainably, especially with MSC-certified fisheries. Still, sole is more vulnerable than some other species because it grows slowly. Preferably choose sole with a sustainability label.
Sole is mainly caught with:
Handlines: rarely used, but the most sustainable method.
Fishing takes place mainly in the North Sea and Channel.
Beam trawling: traditional method, but damaging to the seabed.
Flyshooting or twinrigging: more efficient and less damaging.
Sole is known for its mild, delicate flavor and firm texture. It stays nicely whole when fried and has hardly any bones, which makes it popular in classic French and Belgian cuisines. Sole is versatile and suitable for both simple and refined dishes.
Fresh sole can be recognized by:
Bright, bulbous eyes
Shiny, moisturized skin
Slightly elastic fish flesh
Neutral, salty smell (not fishy or ammonia-like)
Dull skin, parched edges or strong odor indicate less fresh fish.
Popular preparations include:
Sole in the oven with Mediterranean vegetables
Sole à la meunière: fried in butter with lemon and parsley
Sole fillets with white wine sauce
Grilled sole with herb butter
Sole rolls stuffed with spinach or shrimp
